Want to make Boneless Buffalo Wings which are absolutely amazing? Be warned – you’ll forever be tortured by friends and family if you let them try this recipe!
Most people think boneless wings are made by simply chucking some Frank’s sauce onto chicken breast. While that’s going to taste good, it’s nowhere near as good as the real thing.
The real secret to amazing boneless buffalo wings is to start by making the most mouth-wateringly delicious Kentucky style fried chicken. This fried chicken is sooo good, you’ll not even want to add the buffalo sauce!
Let’s get started! You’ll need:
- 1 cup plain flour
- 2 teaspoons salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 egg
- 1 cup milk
- 3 chicken breasts cut into “chicken wing size” strips – each piece should be about the size of two bites!
- 60ml Frank’s Buffalo Sauce (we love this brand, but others are great too)
- Vegetable oil for deep frying
- 1 tablespoon butter
OK, Let’s get cooking!
In a bowl, mix the pepper, flour, salt, cayenne, garlic powder and paprika. In a separate small bowl whisk together the milk and egg. You’ll use these to make the delicious Kentucky style crust before frying.
Place the chicken into the egg mixture, cover it well, then roll it thoroughly in the spice mix. Repeat the whole thing for an extra thick covering. Place the coated chicken pieces on a baking tray and place into the fridge for 15-30 minutes (VERY Important!)
Heat the oil in a large high sided pan, with the oil deep enough to fully cover the chicken pieces. The oil should be heated to around 190C. To know when it’s ready, put the end of a wooden spoon in the oil, and it should bubble quite a bit. Alternatively put a cruton sized piece of bread in the oil. If it turns brown and crispy, the oil is ready!
Fry the chicken in small batches until browned well and thoroughly cooked. This should take 5 or 6 minutes. Don’t put too many pieces in the pan at once, or the heat will drop out of the oil, and you’ll get soggy oily chicken… not good…
Careful – Don’t eat too many hot wings!
STEP 5 (Secret step)
TASTE a piece of the freshly cooked southern fried chicken, it’s going to be extremely tasty, and you’ll have trouble not eating it all before the next step. Discretely enjoy several pieces before continuing to Step 6.
In a heat proof jug or bowl, microwave the Buffalo hot sauce and butter together until melted and hot. Place the cooked chicken in a large bowl and pour over the sauce. Toss and stir the chicken until well covered with the spicy sauce.
